Ingredients
2 heads Romaine lettuce, chopped
4 Persian cucumbers, chopped
2 Roma tomatoes, chopped
1 green bell pepper, chopped
1/2 bunch flat-leaf parsley, finely chopped
1/2 bunch mint, finely chopped
2 bunches green onions, finely chopped
15 green or black pitted olives, halved
4 pieces pita bread (white), cut into squares then fried or baked
2 tablespoons dried za'tar
1 teaspoon sumac
Dressing
1/3 cup olive oil
1/4 cup lemon juice
2 tablespoons red vinegar
2 cloves garlic, minced
1 tablespoon dried mint
1/2 teaspoon salt (or to taste)
Combine all dressing ingredients in a jar and shake well, or bowl and mix well. Set aside. In a large bowl combine salad ingredients and drizzle dressing over top, toss when ready to serve.
