Rice Pudding رز بحليب

Ingredients
1 gallon whole milk
1 cup short grain rice
¾ to 1 cup sugar
4 tablespoons corn starch
1 teaspoon vanilla
¼ cup ground pistachios

Soak and rinse rice in cold water, set aside. Pour milk into large heavy-bottom stock pot and bring to a boil. Add drained rice (plus some water) to boiling milk. Continue to boil until rice is fully cooked. Stir in sugar and allow to boil a few more minutes. Dissolve cornstarch in water and stir into milk mixture until thickened to desired consistency (will thicken a bit as it cools). Add vanilla and take off heat. Ladle into small bowls, garnish with ground pistachios and allow to come to room temperature before placing in refrigerator until well chilled.
