Baby Spinach Salad
Salad
16 ounces fresh baby spinach (or spring mix), washed and dried well
4 ounces feta cheese, crumbled
4 ounces fresh strawberries, sliced
½ granny smith apple, diced
½ cup sliced almonds, toasted
Honey Balsamic Dressing
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
½ cup extra virgin olive oil
1 tablespoon soy sauce
1 tablespoon honey
1 garlic clove, minced
1 teaspoon dijon mustard
Salt and freshly ground pepper to taste
Puree or whisk all dressing ingredients and set aside, dressing should be slightly thick.
In a large bowl, combine spinach, fruit, feta cheese, and toasted almonds. Drizzle dressing over the entire salad and serve immediately.
The great thing about this salad is its versatility. You can swap out many of the ingredients based on what you have available, in season, or your personal preference.
You can add or replace any of the fruits, nuts, or cheese with:
½ cup candied pecans or walnuts
½ cup dried dates, chopped
½ pear, diced
½ cup canned mandarin oranges, drained
½ cup raspberries, blackberries or blueberries
½ cup grapes, halved
